You can specify times of day in the search criteria before you click on search or continue.  Sometimes if the flight times you want aren't showing in the options, it could mean they are sold out OR the price may be higher.  It could be other reasons as well, such as if you're trying to redeem miles for a trip and after specifying the number of miles you wish to redeem, it only shows flights available at the mileage level.  

So the reason the menu isn't showing the flights you want, it could be an availability issue, price, or other factor.  I would contact AA at 1-800-433-7300 to inquire why the flights aren't available on the menu.
