Ice Maker If80ss Ice Level Sensor

Our company has the EdgeStar ice maker IF80SS, recently we have had issues with the ice machine being full and not shutting off. The light on the outside does not indicate that the ice is full and keeps producing it. I have looked at the ice level sensor (located inside the ice maker), it appears that it is a metal bar that runs horizontal to the ice shoot. Can you explain how the sensor is suppose to work, maybe it is something I can check on our side, I am not sure if this sensor is to move up and down or what? Thanks for your help.Clint
